Pasta Dishes: Mediterranean Pasta

Italian food is regarded today as one of the premiere cuisines in the world, famous for exquisite meals consisting of varying ingredients such as olives, balsamic vinegar and pesto. Italian food is simple, vibrant and good for you. Italian food is not just for Italians, but for everyone.

Home cooks and chefs today are becoming more sophisticated about what really are authentic Italian recipes. Well, Italian recipes are and can be simple or elaborate, practical or as foolish, store bought or made at home. But even more today, Italian recipes had become the world’s most important culinary art, and almost where ever you go you will find an Italian restaurant on the corner of a road.

Noodles that stick together can truly affect the dish you are making in a negative way. Lasagna needs to have noodles that are not torn or bunched. If you have a huge build up of starch and try to separate the noodles for use, you risk destroying them and therefore destroying your dish’s presentation. The oil will not affect how the pasta tastes or other ingredients that you add later. It just coats the noodles finely to guarantee that they come out unscathed.

The Cold Water Trick

Do not have oil to use, or cannot use it? Then try using the cold water trick when cooking Italian pasta. What you do is boil your pasta as usual. Then rinse it thoroughly with cold water. This is can be tricky if you are making pasta as a main dish and want it hot. But what you are doing is rinsing the starch off the noodles so that you can easily separate them without breaking them.

Lets move now to Italian pasta sauces determining the best  kind of tomatoes for making sauces, which is of course the diced tomatoes packed in water, not puree are best. When making “pesto” best is to pound the leaves to release the oil, blanch the garlic, and toast the pine nuts. The range of Italian sauces goes well far from simple cream sauces. Had you never tasted those made with beans and lentils? Seafood? Poultry and meat?.

Here is where I invite you for further investigations, you will come across new Italian recipes learning the best methods for preparing pasta dishes. From pasta soups, pasta salads, and filled pasta dishes, as well as the basic of pasta making from fresh egg pasta to pasta without eggs. All this and a long tradition had made that endless number of Italian pasta recipes.

I hope that you will enjoy the process of discovery as much as the recipes themselves, made at home as in an authentic Italian restaurant.

Pasta Do’s And Don’ts For Lovers

Okay, so you found the man or woman of your dreams, he or she is a pasta lover and you want to seal the deal by cooking them the Italian meal of their romantic life. Okay, now what? You can’t just send and Italian Gift Basket or fruit basket and call it a day. This is something that I can relate to. ! I am uniquely qualified to deal with this situation. I am the king of pasta lovers, therefore, my advice on the subject will prove invaluable. Just listen and follow along.

Rule #1 No Artificial Ingredients

Nothing that doesn’t come from the ground should go in the sauce. Don’t even think about using sauce from a jar. You just don’t do that sort of thing. Making your own sauce is so easy that you need not partake in anything so blasphemous. You can actually prepare a wonderful pasta dish from scratch in about 15 minutes or so from beginning to end. You don’t have to stoop that low.

Rule # 2 Al Dente Baby, Al Dente

With a little practice, you can master this one. No one, especially a pasta aficionado likes when they are presented with a beautiful dish of pasta only to discover it is as mushy as Elmer’s Glue. Believe you me, that can really ruin a meal. I don’t care how good the sauce is, the experience will have been ruined.

Conversely, don’t under-cook it either. I have had many a meal ruined by some pasta amateur serving me hard dense pasta. I HATE THAT.

The only way to measure if the pasta is cooked is by tasting it. That is what I still do to this day. I taste and taste it and taste it again until it is cooked to a perfect al dente. Don’t time it, don’t throw it against the wall, don’t do anything other than what I have said. Taste it.

Rule # 3 No Cheese From A Can

Yes, I know. It’s just too easy to grab a can of Kraft Parmesan style cheese and sprinkle it over your delicious dish of pasta. The quality is just not there. Spend A few dollars more and get some good Parmesan cheese and grate it yourself. This is one of those small touches that will tell your significant other that you care.

Listen, don’t fool around with this stuff. It’s serious business to a pasta lover. And if you are trying to lure a pasta lover down the aisle, you should listen to my advice. Now, is this guaranteed to work? Maybe not. But put yourself in their shoes. Who would your rather have as a mate? A total pasta making amateur who serves a lousy dish of macaroni. Or the woman or man whose pasta dish says “I Love You” because I chose to do it the right way, the way you like it, the way it should be done?

You be the judge.
